If you’ve ever looked at a plate of pasta, bread, or fruit and wondered, “Can I actually eat that”, you’re not alone. Carbohydrates can feel confusing when you’re managing diabetes, but the truth is they can still be part of a balanced, satisfying meal. Join us for this fun and informative session of Cooking with Culbertson as we break down the myths around carbs and diabetes.

During this session you will learn how different carbohydrates affect blood sugar, how to build balanced meals, and how to enjoy some of your favorite foods without the guesswork. We’ll share practical tips, smart ingredient swaps, and delicious recipes designed to support healthy blood sugar while keeping flavor front and center. Attendees will also have the opportunity to sample the recipes and ask questions.

Whether you’re living with diabetes, supporting a loved one, or simply curious about healthier cooking, this session will help you rethink carbs and leave feeling confident about what’s on your plate.

Meet Our Dietitian

Katie Horstmeyer, RD boasts more than 16 years of experience in helping people reach their health goals by promoting a healthy mindset toward nutrition. The owner of the Central Illinois-based Advanced Nutrition Care, LLC, Horstmeyer holds a Bachelor of Science in Nutrition and Dietetics from Murray State University.

“With this series, I hope to teach individuals and families how to reframe their thought process away from dieting and quick fixes and establishing a healthy lifestyle that is lasting and attainable.”
